1. Let Sirloin Steak come to room temperature
2. Pat dry with paper towel
3. Pre-heat cast-iron pan to medium heat
4. Season steaks with salt, pepper and olive oil
5. Sear well on each side, for about 5 minutes, flipping once
6. Take steaks off heat and let rest with foil tented over for 5 minutes
7. Serve with smashed potatoes with walnuts, roasted carrots and Chimichurri
